The simplest crepe griddle is a flat, round frying pan, that's shaped just like a crepe. This pan provides the even distribution of heat, and simplicity in making uniformly sized crepes. It's also non-stick, so flipping the crepes over is an simple thing. Aside from these advantages, this type of griddle is utilized in the same manner you would use a frying pan for cooking crepes.

There is also a more specialized crepe griddle. It appears like a frying pan with a dome shaped surface. This hot surface is dipped in batter, which adheres to the pan so there's no need for smoothing or spreading it out evenly. It cooks this way, and then is ready to eat.

The last type of crepe griddle is more frequently known as a crepe maker. For some the use of the word griddle doesn't seem to fit the ipan, but it is still used fairly commonly. These crepe makers are composed of a heated plate. The crepe batter is spread onto the plate, frequently using a specific tool designed just for that purpose, and the top plate is shut down over it. The top plate is also heated, which means that both sides are cooked simultaneously.

With the electric or gas crepe griddle, crepes are cooked evenly and promptly. These appliances have an automatic thermostat and ready light, so you are advised when the crepes are cooked to perfection. With this type of griddle you are certain to get perfect crepes every time, but some would argue that the fun is taken out of the crepe making process.

For those who like to create things for themselves and enjoy the satisfaction of flipping over a perfectly browned crepe (and who don't mind the occasional disappointment of a burned, torn or wrinkled crepe) the more traditional type of griddle is the best alternative.
